“Uborka saláta” from The Paprikas Weiss Hungarian Cookbook

Serves 6

Here is another great recipe submitted by Peter Doherty. This sounds very intriguing and uses several ingredients that we have on the stand this week!

2 large cucumbers, peeled and thinly sliced
1 tbls salt
1 small onion, thinly sliced
1 clove of garlic, finely chopped
3 tbls vinegar
1 tsp of sugar
2 tbls cold water
Pepper
1 tsp Hungarian sweet paprika
1 tomato, cut into wedges
½ medium green pepper, cored, seeded, and cut into strips
¾ cup sour cream

Toss the thinly sliced cucumbers with the salt in a small bowl. Chill for 30 minutes, or until most of the liquid has drained off. Squeeze the remaining liquid from the cucumber slices and pat dry on paper towels. Place in a salad bowl and then fold in the onion, garlic, vinegar, sugar and cold water. Season with pepper and paprika. Garnish with tomato wedges and green pepper. Serve plain or with sour cream.
