This is a traditional dish from Abruzzo in Italy.  It is very delicious and very simple.  Please excuse the lack of amounts but this is a dish that is truly the exclusive domain of home cooks!

Dried red pepper flakes
Your best olive oil

Saute some onions in olive oil. When golden add cubes of potato and cabbage that has been cut into squares or wide ribbons. Add water to cover and bring to a boil. Cook over a low flame, trying not to stir so much that the potatoes fall apart, about 30 minutes to an hour depending on your quantities. Serve, with some of the cooking liquid, in bowls, and season to taste with dried hot pepper flakes, raw garlic, and lots of the best olive oil you have. This also becomes a wonderful minestrone by adding pasta!
