This recipe makes 2 loaves and the bread freezes well.
4 large eggs
1 cup oil (I use 2/3 cup oil, 1/3 cup Orange Juice)
2 cups sugar
3 cups flour (I use whole wheat pastry flour)
1 teaspoon baking soda
11/2 teaspoon salt
3 cups strawberries, thinly sliced
1 teaspoon orange zest (optional)
Beat eggs till fluffy, beat in oil then sugar. Sift (I just stir) in dry ingredients. Add all but 2 tablespoons dry to wet. Mix 2 tablespoon dry with strawberries to coat. (I omit this step with no noticeable difference.) Toss berries into mix with orange zest.
Bake at 350 degrees for 60 min. Cool before removing from pan.
