Adapted from Not your Mother’s Casseroles
9 x13 dish
Bake time 30-45 minutes
2 lbs. carrots peeled and sliced on the diagonal into 1/2 ” pieces
2/3 cup olive oil
Zest and juice of 2 lemons
1/2 tsp red pepper flakes
4 oz feta crumbled
1/2 tsp salt
1/2 cup fresh mint leaves, coarsely chopped
1. Preheat oven 425. Toss carrots in bowl with red pepper, lemon zest, 1/3 cup olive oil. Spread in baking dish and crumble feta on top.
2. Roast for 30-45 minutes, until carrots are tender and slightly browned. Mix remaining 1/3 cup olive oil in bowl with lemon juice and mint leaves. Toss with carrots and serve.
