You can make this salsa now, or partially prepare and freeze for use later, when the summer tomatoes are just a distant memory. To make ahead, complete steps 1-3 and freeze. When ready to use add the lime juice and cilantro.



5 Roma (plum) Tomatoes

Hot Peppers (1 or 2)

1/2  Onion

2/3 cup chopped fresh Cilantro



1. In small covered pan put tomatoes, peppers, onion, and garlic and 1/2 inch of water

2. Cook on low until onion is soft

3. Puree the tomatoes, onion, peppers, garlic and juices from pan

4. Add cilantro and salt

5. chill and serve
