Ingredients
Dressing
5 Tbl grapeseed oil
2 Tbl fresh lime juice
1 clove garlic minced
1 tsp minced fresh ginger
1 tsp grated lime zest
Salad
10 oz small cherry tomatoes halved
2 small yellow crookneck squash, diced
2 small avocados, diced
2 Tbl chopped cilantro
¼ cup sliced green onions green part only
½ cup toasted pine nuts
½ cup microgreens or baby greens
Directions
- Make dressing, whisk together all ingredients in a small bowl and season with salt and pepper.
- Salad Toss all ingredients with dressing and divide among 8 small bowls
