Ingredients

  1. 1/2 cup halved cherry tomatoes yellow
  2. 1/2 cup halved cherry tomatoes red
  3. 2 medium garlic cloves minced
  4. 2 TBL chopped parsley plus 1 tsp for garnish
  5. 1 tsp dried oregano
  6. 1 tbl red wine vinegar
  7. 1/2 cup pitted olives
  8. 1 tbl olive oil
  9. 2 small beets spiralized or finely grated
  10. 1/2 small red onion spiralized or finely grated
  11.  8 oz block of feta

Directions

  1. Preheat oven 400, Combine all ingredients except feta and parsley for garnish
  2. Place brick of feta in center of large oven safe skellet. top and surround with the beet mixture. Cover with foil and heat for 20 minutes ubtil beets wilt.Serve hot garnish with parsley. Serve with hot with Pita
