Adapted from Healthy Spirlizer Cookbook


4 cucumbers ends cut flat spiralized into noodles

2 Tbl sesame seeds

1 Tbl soy sauce

3 Tbl rice vinegar

1 Tsp sesame oil

1/4 cup olive oil

1 garlic clove minced

1/2 Tsp grated ginger

1/4 Tsp sea salt

2 scallions thinly sliced


  1. Pat cucumber noodles dry with paper towel and place in bowl with sesame seed
  2. In small bowl whisk together soy sauce, rice vinegar, sesame oil, olive oil, garlic, ginger, and salt
  3. Toss with noodles. Garnich with scallions
