Ingredients

  • 1/4 cup plain yogurt
  • 1/4 cup mayonnaise
  • 1 TBL lemon juice
  • 1 Tsp honey
  • 1 Tsp salt
  • 1 Tsp pepper
  • 3 large carrots
  • 2 medium apples
  • 1 Tsp poppy seeds

Directions

  1. Combine yogurt, mayonnaise, lemon juice, salt, pepper in a large mixing bowl.
  2. Peel carrots and cut into matchsticks.
  3. Quarter and core apples, slice into matchsticks
  4. Mix carrots and apples with yogurt mixture
  5. Refrigerate at least 2 hours
  6. Toss with poppy seeds and serve
