Adapted from P. Allen Smith’s Seasonal recipes
- 1/4 cup plain yogurt
- 1/4 cup mayonnaise
- 1 TBL lemon juice
- 1 Tsp honey
- 1 Tsp salt
- 1 Tsp pepper
- 3 large carrots
- 2 medium apples
- 1 Tsp poppy seeds
- Combine yogurt, mayonnaise, lemon juice, salt, pepper in a large mixing bowl.
- Peel carrots and cut into matchsticks.
- Quarter and core apples, slice into matchsticks
- Mix carrots and apples with yogurt mixture
- Refrigerate at least 2 hours
- Toss with poppy seeds and serve
