Adapted from Molly Katzen Heart of the Plate
- 1 1/2 pounds sweet carrots coarsely grated
- 2-3 Tbl. olive oil
- 1-2 tbl fresh lemon juice
- 1/4 tsp salt
- Combine everything in a bowl and toss to blend
- Serve right away and cover tightly and chill. Serve cold or cool room temperature.
