Adapted from Molly Katzen Heart of the Plate


  • 1 1/2 pounds sweet carrots coarsely grated
  • 2-3 Tbl. olive oil
  • 1-2 tbl fresh lemon juice
  • 1/4 tsp salt


  1. Combine everything in a bowl and toss to blend
  2. Serve right away and cover tightly and chill. Serve cold or cool room temperature.
