Ingredients

  • 3/4 lb carrots peeled and shaved with vegetable peeler
  • 4 scallions trimmed and thinly sliced
  • 2 Tbl unseasoned rice vinegar
  • 1 Tbl  vegetable oil
  • 1 Tbl toasted sesame seeds
  • 1/2 Tsp lime zest and 1 Tbl lime juice
  • Salt and peper

Directions

  1. Combine all ingredient and season with salt and pepper
  2. Toss to combine and serve
