Adapted from Weight Watchers Cook it Fast


  1. 9 oz fresh fettuccine
  2. 4 oz log of goat cheese crumbled
  3. 5 oz baby arugula
  4. 1 1/2 cup cherry tomatoes
  5. 1/2 tsp black pepper


  1. Cook Fettuccine according to directions. Drain reserving 1 cup of cooking water.
  2. Put pasta back in pot with 1/2 cup of reserved water over low heat. Add goat cheese, arugala, tomatoes and pepper.
  3. Heat and toss until cheese melts and arugala begins to wilt (about 1 minute)
  4. Add more water if too dry and serve.
