Adapted from Weight Watchers Cook it Fast
- 9 oz fresh fettuccine
- 4 oz log of goat cheese crumbled
- 5 oz baby arugula
- 1 1/2 cup cherry tomatoes
- 1/2 tsp black pepper
- Cook Fettuccine according to directions. Drain reserving 1 cup of cooking water.
- Put pasta back in pot with 1/2 cup of reserved water over low heat. Add goat cheese, arugala, tomatoes and pepper.
- Heat and toss until cheese melts and arugala begins to wilt (about 1 minute)
- Add more water if too dry and serve.
