From Steamy Kitchen. A savory jam to spread on sandwiches with meat, on grilled fish or chicken, or to serve with cheese.
4 jalapenos, sliced, ribs and seeds removed
1 cup loosely packed cilantro and mint stems and leaves (mix to taste)
2-inch knob ginger, chopped
5 cloves garlic, smashed
½ cup cider vinegar
2 Tblsp soy sauce
1 lb green tomatoes, peeled and chopped
3 cups sugar
- In a blender or food processor, blend the jalapeños, herbs, ginger, garlic, soy sauce and cider vinegar until smooth.
- Pour the mixture into a heavy bottomed pot and add the sugar and tomatoes.
- Bring to a simmer and cook on low till glossy and thick, about 15 minutes. Make sure you stir occasionally to prevent the jam from sticking to the bottom of the pan.
