Whenever you’re not sure what to do with a starchy vegetable, you can be sure that grating it, mixing it with eggs and some flavor boosters like onion or garlic (or both!), and frying in oil is always sure to please. This recipe is adapted from Allrecipes.

Ingredients

1 1/2 cups grated daikon
2 tsp salt
1 clove garlic, minced
1/2 red onion, diced
1 egg beaten
1/2 c Italian seasoned or plain breadcrumbs
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp Sriracha or other Chile-garlic sauce (optional)
 
1 1/2 c oil for frying
 

Directions

  1. Place the grated daikon in a large bowl and sprinkle with the salt. Refrigerate for 30 minutes.
  2. Drain the daikon, squeezing out any excess liquid. Stir in the garlic, onion, egg, bread crumbs, pepper, paprika, and chili garlic sauce. Mix well and form into about 8 round patties.
  3. Pour oil into a large skillet and heat over medium heat until hot. Fry the patties in the hot oil until firm and nicely browned, about 3 minutes per side. Drain on a metal cooling rack or paper towels.
  4. Enjoy with additional hot sauce, ketchup, or any dipping sauce you like.
