I almost hesitate to call this a recipe, but it is so delicious, simple, and a great use for all those cucumbers.

Makes 1 sandwich


  • 2 slices of bread (country white works well, but you can use whatever you like)
  • 1 T mayonnaise
  • 1 small cucumber, peeled and sliced ¼” thick, length wise
  • 1 sprig dill
  • Salt and pepper to taste


  1. Toast bread lightly
  2. Spread mayonnaise on both slices of bread and layer cucumber on top of one of the slices. Sprinkle dill fronds over cucumber as well as salt and pepper.
  3. Top with the second slice of bread and enjoy.
