I almost hesitate to call this a recipe, but it is so delicious, simple, and a great use for all those cucumbers.
Makes 1 sandwich
- 2 slices of bread (country white works well, but you can use whatever you like)
- 1 T mayonnaise
- 1 small cucumber, peeled and sliced ¼” thick, length wise
- 1 sprig dill
- Salt and pepper to taste
- Toast bread lightly
- Spread mayonnaise on both slices of bread and layer cucumber on top of one of the slices. Sprinkle dill fronds over cucumber as well as salt and pepper.
- Top with the second slice of bread and enjoy.
