1 onion, chopped
2 garlic cloves, minced
1 Tbsp. olive oil
3 cups kale, chopped
2 sweet potatoes, diced
1 qt. broth
2 cups pasta shells, cooked
Crushed red pepper and Parmesan cheese for topping
1. Sauté the chopped onion and minced garlic cloves in a pot with the olive oil until softened.
2. Add the kale, sweet potatoes and broth. Simmer and cook until the kale wilts and the sweet potatoes are tender.
3. Stir in the cooked pasta shells. Sprinkle with crushed red pepper and Parmesan.
