Serves 3 as a side dish




1 English cucumber (or 6-8 small pickling cucumbers)
2/3 cup sour cream
1 Tbsp. fresh dill
1/4 tsp. salt
Squeeze of a lemon
Pinch of pepper



Wash and peel the cucumber. Slice thinly. Add the salt and let sit for 10 minutes. Then drain any water that may have accumulated.

Add the sour cream, dill, squeeze of a lemon and a pinch of pepper to taste. Mix and chill in the refrigerator until ready to serve.
