Makes enough spread for about 7 sandwiches


  • 7 oz garlic scapes (about 20)
  • 1/2 cup almonds
  • 1/2 cup olive oil
  • 3 Tbs lemon juice
  • 1/4 cup Parmesan
  • Salt and pepper to taste

For Grilled Cheese with Garlic Scape Spread Sandwich

  • 2 slices sourdough bread
  • 1 Tbs butter, softened
  • 1 oz mozzarella cheese, sliced
  • 3 Tbs garlic scape sandwich spread


Combine the garlic scapes and almonds in a food processor. Process until the scapes and almonds are chunky. Add the olive oil and lemon juice. Process until smooth. Mix in Parmesan, salt and pepper.

Grilled Cheese Sandwich with Garlic Scape Spread (1 serving)

Spread the butter over the outsides of the bread slices. Smear the inside of one slice with the garlic scape sandwich spread.

Heat a large heavy bottomed skillet over medium heat. Place the bread slice with the garlic scape sandwich spread butter-side down in the skillet. Top with mozzarella slices and the second slice of bread, butter-side up. Cook in the skillet until the sandwich is browned on each side, and the cheese is melted inside.
