Makes 1 mocktail


  • 10 mint leaves
  • 2 oz simple syrup
  • 1 tsp honey
  • 4 oz lemon juice, freshly squeezed (about 2 lemons)
  • 2 to 3 oz club soda


In a lowball cocktail glass, gently muddle the mint leaves, simple syrup and honey together. Press gently on the mint leaves until they release their juices. Don’t over muddle.

Add in a handful of ice to the glass. Top with the lemon juice, followed by the club soda. Gently stir before serving.
