Ingredients
2 bunches of tatsoi
3 Tablespoons of olive oil
1/2 teaspoon of sea salt
1/4 teaspoon of black pepper
1 cup of panko breadcrumbs
1/2 cup of freshly grated Parmesan cheese
2 cloves of garlic, minced
1 lemon, zested and juiced
Directions
Preheat your oven to 400°F. Wash your tatsoi bunches thoroughly and pat them dry with a kitchen towel to remove as much water as possible.
Set your tatsoi on a baking sheet and drizzle it with the olive oil. Then, sprinkle them with the sea salt and black pepper. Toss to make sure the leaves are well-coated and spread them out in an even layer on the baking sheet.
In a bowl, combine the panko breadcrumbs, freshly grated Parmesan cheese, minced garlic, and the lemon zest. Sprinkle the breadcrumb mixture over the tatsoi, making sure they are evenly covered.
Bake the tatsoi in the oven for about 10 minutes, or until the breadcrumbs are golden brown and the tatsoi is wilted and crisp. Be sure to monitor the tatsoi while it cooks since it can burn easily.
Remove the tatsoi from the oven and drizzle the lemon juice over it. Serve it hot as a side dish.
