Ingredients

  • 1 Tablespoon olive oil
  • 2 medium carrots, peeled and cut into small dice
  • 2 medium potatoes, any variety, peeled and cut into small dice
  • 1/2 cup alphabet noodles
  • 1 vegetable bouillon cube
  • 1/4 teaspoon paprika
  • 1/4 teaspoon dried dill, or 1 teaspoon fresh
  • 1 cup frozen peas, thawed
  • 1 cup diced ripe tomato or canned diced tomatoes (about half of one 16-ounce can)

Directions

  1. Heat the oil in a medium saucepan. Add the carrots and sauté for 5 minutes over medium heat.
  2. Add the potatoes, noodles, bouillon cube, paprika, dill, and 4 cups of water. Bring to a simmer, then cover and simmer gently until the carrots and potatoes are tender. 15 to 20 minutes.
  3. Add the peas and tomatoes and simmer for another 5 minutes. Add a little more water if the broth seems crowded and cook just until heated through.
