Ingredients
- 1 Tablespoon olive oil
- 2 medium carrots, peeled and cut into small dice
- 2 medium potatoes, any variety, peeled and cut into small dice
- 1/2 cup alphabet noodles
- 1 vegetable bouillon cube
- 1/4 teaspoon paprika
- 1/4 teaspoon dried dill, or 1 teaspoon fresh
- 1 cup frozen peas, thawed
- 1 cup diced ripe tomato or canned diced tomatoes (about half of one 16-ounce can)
Directions
- Heat the oil in a medium saucepan. Add the carrots and sauté for 5 minutes over medium heat.
- Add the potatoes, noodles, bouillon cube, paprika, dill, and 4 cups of water. Bring to a simmer, then cover and simmer gently until the carrots and potatoes are tender. 15 to 20 minutes.
- Add the peas and tomatoes and simmer for another 5 minutes. Add a little more water if the broth seems crowded and cook just until heated through.
