Feeling frustrated after a long day? Channel those feelings into making Herbed Smashed Cucumbers! Crushing the cukes helps them absorb the yogurt-based dressing better and produces a delightful texture.

Often mistaken for the more well-known ratatouille, the Provençal Tian is a great way to enjoy several vegetables from the share at once. This vegan casserole involves browning then baking, resulting in an even deeper and richer taste.
