Eat Your Share

I hadn't even heard of kabocha squash before last year's CSA harvest and now, there's no going back. Baked goodness straight from the oven, this Kabocha Gratin comes with a Japanese twist, courtesy of umami and miso flavors.

Another delicious recipe find from Stearns sharer/photographer Nicci Meadow, the Eggplant Caponata is a quick and simple way to enjoy several late-season offerings in one savory Mediterranean classic.
