Recipe makes one cocktail
“Fading fast. Get them while they last.” That goes for the blueberries AND the drink that has enormous potential to become a signature summer cocktail. Fresh and lovely tasting, this can convert even those tough ìI donít drink mojitosî people. I advise making extra simple syrup so that you have it on hand!
Make the lavender simple syrup:
1/4 (?) cup of organic dried lavender
1/2 (?) cup of super fine sugar
1 cup of water
Bring all ingredients to boil on medium heat. Reduce heat and simmer for about 15-20 minutes, stirring occasionally. Let it cool and strain in a clean container. Store in the refrigerator.
For the cocktail:
10 to 15 mint leaves
1 oz lavender simple syrup
1 oz fresh lime juice
15 to 20 blueberries
1.5 oz white rum (Full disclosure would be to use 2 oz of rum for a bigger kick; also, Santa Teresa Claro Rum comes highly recommended)
Club soda
In a nice tall glass muddle the mint, lavender syrup, lime juice, blueberries and rum. Fill the glass with crushed ice and top with club soda. This one ís a real doozy- enjoy it!
